Iceland’s Sigurlaug Sverrisdóttir is an entrepreneur who has gained fame as the founder of the ION Adventure and ION City Hotels chain. Situated in the middle of the Icelandic lava fields, the chain is unique in the world. The ION Luxury Adventure Hotel is located close to Thingvellir national park and bathes in the Northern Lights. Its design and services were inspired by Iceland’s powerful natural environment and the country’s customs and were delivered by local professionals. The food offered at the hotel is organic and made from local ingredients. A connection with nature and sustainability are the principles behind every aspect of the management of the hotel and of staying there as a guest. In May this year Sverrisdóttir opened a further hotel in the capital Reykjavík: the ION City Hotel, which was also created in cooperation with Icelandic designers and artists. Sverrisdóttir will be talking about her experiences at the Estonian National Museum in Tartu on 11 September as part of the prestigious international food and hospitality forum SAUCE.
